If I haven’t been working this past week, I’ve been outdoors enjoying the weather!
Daylight savings has also given me an extra hour of daylight!
This past Wednesday, I headed outside for a run.

I’ve really been trying to hit the workouts hard now that the lovely sunshine has opened up a whole new world of opportunities.

Yesterday I was excited to step up back onto my trainer.

Workouts This Week:
Monday- C25k/Abs Workout (Bender Ball)
Tuesday- Jillian Michaels Ripped In 30 Workout
Wednesday- C25k Run Outside!/Abs Workout
Thursday- 5 Mile Cycle/2 Mile Trail Walk With Nate (Forgot to take pictures! sorry!)
Today-I have another run planned.
I have drafted up another workout plan for the upcoming month.

The Munchies
First off, let me introduce you to my new favorite recipe:
Peanut Butter, Coconut and Fruit Granola Bars
(or whatever you want Granola Bars)

I’m all for simple recipes, and this one is just that!
You can customize this based on what you have in your pantry, it’s really quite versatile, which is awesome.

It’s as simple as dump and mix.

You press the mixture into the bottom of a pan and put it in the freezer for a couple of hours.
Take them out of the freezer, cut, and individually wrap. I suggest keeping them in the freezer to keep them more fresh longer but you don’t have to.
Ingredients
1 cup old-fashioned rolled oats
1/2 cup dried fruit (I used golden raisins, dried blueberries, and dried pomegranates)
2 tbsp agave nectar (I used honey)
2 tbsp unsweetened applesauce (or use all agave or honey)
1/4 cup peanut butter (or nut butter of your choice)
2 tbsp coconut oil
1/3 cup shredded coconut
1 tbsp cinnamon
1/2 tsp vanilla
2 tbsp chia seeds or flax seeds
Directions
Place all ingredients in a medium bowl and stir until mixture is well-combined. Line a 9×5 loaf pan with wax paper or foil and firmly press oat mixture into the bottom of the pan. Freeze for at least 2 hours or until ready to cut. Cut into 6 bars and individually wrap and store in freezer.
Yield: 6 bars.
